There is tons of information available on the net but the best book to learn seo from is definitely Aaron Wall’s seo book:
He provides frequent updates to his ebook (for free once you purchase it)

Most books are outdated by the time they are published. Search engines are always changing their search methods. If you want a book go to Barnes & Nobels and look for the most recent published book.
